Here’s what you’ll need to get started:
Corn Salsa:
1 can (14.5 oz) diced tomatoes (low sodium), not drained
2/3 cup frozen whole-kernel corn
1 cup chopped cucumber, not peeled
1/2 cup chopped bell pepper, red or green (I used yellow)
1/4 cup chopped fresh cilantro
2 tbsp red wine vinegar
1/2 tsp garlic powder and ground cumin
1/4 tsp salt (optional)
1/8 tsp ground black pepper
1/8 tsp cayenne pepper
2 lbs salmon fillets
1/4 tsp salt (optional)
1/8 tsp ground black pepper
