Here’s another recipe from the amazing and fabulous ExHotGirl.
This is a vast improvement upon the lasagna recipe I posted a while back from Quick & Healthy Recipes and Ides. (Where I get most of my recipes for the week.)
I liked it well enough but it was too thin, and just didn’t have enough substance. So, I modified!
1 large container fat free cottage cheese (small curd)
2 tbsp dried parsley
2 tsp chopped garlic
1 jar spaghetti sauce (I used Prego’s heart healthy sundried tomato and vegetable chunk)
1 box whole wheat uncooked lasagna noodles
2 cups Italian cheese blend (shredded)
1/4 cup Parmesan cheese
1 package sliced portobello mushrooms
1 yellow squash, sliced
1 cup spinach leaves
Now get moving and scoot over for the rest of the recipe and instruction and let me know when it’s ready. I’m coming over! What would we do without the ‘girl’ from ExHotGirl? Thanks for everything – jenn.
