I will go without a lot of things but the one I hate to give up, is dessert. I saw this recipe last week but I've been running the gauntlet with work, family and walking.
May I present the so del.icio.us and diggin it, Strawberry Kiwi Dessert Cups. This looks more like a mini cake than some skimpy cupcake. Jenn's Light Veggie Pasta
1/2 green bell pepper, sliced
1/2 red bell pepper, sliced
1 cup broccoli heads, bite sized pieces*
1 cup cooked asparagus spears, cut into bite sized pieces*
2 servings thin whole wheat pasta
2 tbsp extra virgin olive oil
1/2 cup water
1 tbsp chopped garlic
1 tsp black pepper
1 tsp Italian seasoning
*the asparagus and broccoli can either be raw and sauteed with the rest of the veggies, or if you do microwave pouches, add them just before putting the mixture of all veggies onto the cooked...

Baked BBQ Chicken Dinner and Baked Apple Dessert
Jenn's BBQ Chicken
1 lb skinless, boneless chicken breasts, cut into pieces
1/4 cup fat-free beef broth (low sodium)
2 tbsp soy sauce
1/2 tsp ground ginger
2 tbsp BBQ sauce of your choice
Put the chicken pieces into a dish. Pour mixture of beef broth, soy sauce and ginger over the chicken. Refrigerate and let chicken marinate in the mixture for 1-3 hours.
Preheat oven to 350 degrees. Drain and discard marinade. Transfer chicken to a baking dish that has been sprayed with nonstick cooking spray. Put dollops of BBQ sauce over the chicken...
